Hi…I’m Yvonne. I wanted to start Paleo Sensible to help me and people like me who have autoimmune diseases. I have Chronic Thyroiditis (aka: Hashimoto’s disease), hypothyroidism, enlarged thyroid (goiter), multiple nodules on my thyroid, degenerative disc disease (DDD), spinal arthritis, peripheral neuropathy, a herniated disc & 2 bulging discs in my neck, and a bulging disc in my low back. Ok that was exhausting.

This has all happened to me in the last five years; it’s been a lot to handle. The people immediately around (family and friends) me are very supportive, I’m lucky in that aspect. That’s not to say I haven’t lost friends or disconnected from family, cause I have. I just refuse to let them get me down and define who I am.

Oh I almost forgot that I was diagnosed with leukocytoclastic vasculitis 10 1/2 years ago, it’s been in remission for 10 years with occasional small, manageable flare ups. However, I have NEVER met anyone who was also diagnosed with it. I have since learned it is an extremely rare form of vasculitis plus I had full blown purpura on both legs which is even more rare.

I want this blog to be about my love of cooking and how I cook to support my body and health. Speaking of cooking, I follow my own version of the Paleo diet. It’s kinda a cross between Primal Paleo and Autoimmune Paleo. Basically, I don’t eat gluten, dairy (mostly), soy, and nightshades (I’ll get into nightshades in a future post).
